How to Make the Ultimate Cheese Toastie (Grilled Cheese)

A toastie is one of the simplest comfort foods to make. It’s a crunchy, flavor-packed snack that comes together in minutes. Despite the simplicity, each element is crucial for the ultimate melty toast. I’ll be showing you tips on how to make the best toasties, and a few recipes to get things started. Once you have the basics down pat, you can explore with different fillings and cheese combinations to find your perfect toastie.

Toastie Tips:

  1. Choose the right bread. A grilled cheese toastie is mostly made of, you guessed it, bread. It’s important to use a firm bread to hold up the filling. You can use different varieties of bread from white bread to sourdough, but make sure the slices are thick enough.
  2. Spread it like butter. For a toastier bread, spread room temperature butter on the bread, not on the pan. And be generous! Smear a thin layer (around 1-1.5cm) on the outer side of the bread. This ensures every nook and cranny will be coated in fat, which helps it brown and create a crust as it cooks.
  3. The type of cheese matters! It’s not a toastie if the cheese doesn’t ooze. That means cheeses like feta, parmesan, and manchego won’t work. Go for mozzarella, cheddar, American cheese, fontina, and the like. Even better, use a combination of any melty cheese for the ultimate grilled cheese toastie.
  4. Cook on low-medium heat. All good things take time. So take your time to toast the sandwich over a low-medium flame. This will make sure that the cheese inside melts just right, without burning your bread.

Grilled Cheese Toastie

Ingredients:
  • white sourdough bread, sliced 0.5 – 1in thick
  • mozzarella cheese, grated
  • swiss cheddar cheese, grated
  • butter, for spreading
  1. Smear butter on the outer portion of the bread. Let it cool down to room temp first for easier spreading.
  2. Grate your cheese. Make sure to be generous with the cheese, you usually use than you think you’ll need. Place the second layer of bread on top, you can sprinkle a little cheese if you prefer to have a nice cheese crisp on the exterior.
  3. Heat your pan up to low-medium heat. Once hot, place your sandwich and cover with a pot lid (use a lid that’s smaller than your pan so it also serves as a weight). Cook until you reach your desired toastiness.

 Mushroom Toastie

Ingredients:
  • white sourdough bread, sliced
  • 1 clove garlic, minced
  • 1/2 white onion, diced
  • portobello mushrooms, sliced (you can also use shiitake and brown mushrooms)
  • salt and pepper to taste
  • mozzarella cheese, grated
  • swiss cheese, grated
  1. Heat up a pan with oil and saute onions and garlic for 3 minutes. Once it starts to brown, add mushrooms. Season to taste. Cook down until it reduces in volume.
  2. Spread butter on the outer side of your bread. Flip and layer the mushrooms and cheese.
  3. Over low-medium heat, toast your sandwich until you reach your desired toastiness.

Ingredients:
  • 4 pcs thinly sliced ham
  • swiss cheese, grated
  • mozzarella cheese, grated
  • 1 egg
  • white sourdough bread, sliced
  • butter for spreading
  1. Spread butter on the outer portion of the bread. Flip, and layer ham and cheese.
  2. Make a well in the center, creating a well high enough to contain the egg without spilling over. Place egg in well.
  3. Over low heat, toast the sandwich and cover with a small pot lid. Toast until you reach your desired toastiness.
