YumPinas collaborates with Chicken Star as they explore more unique twists to a variety of already beloved Filipino dishes. Share this with your family and friends or enjoy a solo feast.

Pork Tocino Popcorn with Aioli 

Hankering for something to munch on while you’re binge-watching all the shows? Well, then get comfy because this crunchy-on-the-outside and juicy-on-the-inside tocino snack is a whole meal already!

 

Ingredients:

  • 250g Chicken Star Pork Tocino
  • Vegetable Oil 

Breading

  • 45g of flour
  • A pinch of pepper
  • ½ tsp of salt
  • ¼ tsp of garlic powder
  • 2 eggs 
  • 150g cornflakes

Side Dish: Slaw Dressing

  • ½ tbsp of sour cream
  • 2 tbsp of mayonnaise
  • 2 tsp of white sugar 
  • ¼ tsp of garlic powder 
  • ¼ tsp of onion powder 
  • 1 tbsp of lemon juice
  • Green cabbage 
  • 1 tsp of spring onion 

You Will Need:

  • A mixing bowl
  • A whisk 
  • A frying pan
  • A mortar and pestle
  • A cooking pot

Instructions: 

  1. Pour vegetable oil to start a sizzle on the pan then put your Chicken Star Pork Tocino and wait for the meat to caramelize. 
  2. Once it’s fried, dice the tocino into bite-sized pieces. 
  3. It’s time to prep the breading so gather all your dry ingredients into a bowl and whisk away. 
  4. Next, add the diced tocino into a bowl full of flour mix and make sure to thoroughly coat the meat. 
  5. Crack two eggs into a bowl and quickly whisk it with a fork. 
  6. Pour the egg mixture on top of the pork tocino. Make sure to drench it well by tossing the tocino around in the bowl. 
  7. Using a mortar and pestle, crush the cornflakes into bits and pieces. 
  8. Pour the crushed cornflakes into a clean bowl then place the tocino bits and cover it with the DIY breading. 
  9. Once the tocino is thoroughly coated in the mix, it’s time to fry it up again. Drop the breaded meat on a cooking pot filled with oil and deep fry until golden brown. 
  10. Now make a slaw side dish to go with your poppers. Start by mixing all the ingredients together in a bowl and whisk until you make a sauce. 
  11. Pour the mixture into a bowl of shredded green cabbage and toss it around to make sure it’s all sauced up. Top it off with finely chopped spring onion, pair it with a plate of your tocino poppers, and your meal is set.

Ham Bibimbap

Are you currently on a K-culture kick throwing finger hearts everywhere? Then savor the sweet and smoky taste of this K-style-meets-Pinoy-style crossover comfort food.  

 

Ingredients: 

  • 3 slices of Chicken Star Premium Ham 
  • 1 egg

Gochujang Sauce

  • 5g of minced garlic 
  • 45g of gochujang paste
  • Salt 
  • Pepper
  • 1 tsp of sesame oil 
  • 10g of mirin 
  • 2 tsp of soy sauce 

Side Dish: Bean Sprout Dressing*

  • 1 tsp of sesame seeds
  • 2 tbsp of sesame oil 
  • 1 tsp of white sugar 
  • ½ tsp of salt

Bibimbap Toppings

  • 15g of bean sprouts*
  • 10g of carrots 
  • 15g of spinach blanched 
  • 10g of zucchini 
  • 1 tsp of spring onion

You Will Need:

  • A mixing bowl
  • A whisk 
  • A sauce brush
  • A frying pan or grill plate
  • A mortar and pestle
  • A cooking pot
  • A strainer 

Instructions: 

  1. Prep your gochujang sauce by whisking all the ingredients together in a bowl. 
  2. Place the slices of Chicken Star Premium Ham on a clean surface and baste them by brushing the meat with gochujang sauce. Don’t forget to coat both sides of the ham!
  3. Pan-sear the ham until it’s cooked to perfection. 
  4. Your holiday ham won’t be complete without a healthy portion of bibimbap toppings. Start with the bean sprout dressing and pour all the ingredients into a mortar and pestle, then grind everything until it forms a paste. 
  5. Using a cooking pot, blanch the bean sprouts, drain the excess water, and place in a clean bowl. Pour the dressing over the bean sprouts. 
  6. Blanch your carrots and spinach separately then remove the excess water and set aside for now. 
  7. Place the zucchini on the chopping board and julienne the veggie into very fine strips. Then mince some spring onion.
  8. Place the carrots, spinach, zucchini, bean sprouts, spring onion, in separate containers so you can have an easier time assembling the bibimbap dish.  
  9. Get a bowl of warm fluffy rice and place an egg, cooked sunny side up, right in the middle. 
  10. Then assemble the rest of the toppings, plus the ham, around the egg. Remember to set aside the gochujang sauce for dipping. Now you can indulge in a healthy and hearty bowl of yum.

Pork BBQ Bao in Asian Slaw

In this recipe, the Pinoy street eat that can’t be beat joins forces with a Chinese-style chow. The result is a light, zesty snack that’s just bursting with a citrusy flavor profile, cushioned between soft, chewy buns. 

 

Ingredients:

  • 1 Chicken Star Barbecue 
  • 1 store-bought cua pao

Peanut Hoisin Sauce

  • 5 tbsp of soy sauce
  • 2 tsp of peanut butter 

Sesame Dressing 

  • ½ tbsp of soy sauce
  • 2 tbsp of Japanese mayonnaise
  • ½ tsp of sesame oil 
  • ½ tbsp of crushed peanuts
  • 2 tbsp of lemon juice 
  • ½ tsp of mirin 
  • 1 tsp of white sugar 
  • 1 red cabbage
  • 1 green cabbage

Pickled Cucumber

  • 1 cucumber 
  • 50ml of water
  • 30ml of vinegar
  • 45g of white sugar

You Will Need:

  • A saucepan
  • A knife
  • A whisk 
  • A spatula 
  • A large mixing bowl 
  • A food container

Instructions:

  1. Start with the peanut hoisin sauce and put the soy sauce and peanut butter in a heated saucepan. Whisk briskly until the mixture thickens into a creamy sauce. 
  2. For the next component of this dish, prepare the sesame dressing. Combine the soy sauce, Japanese mayonnaise, sesame oil, crushed peanuts, lemon juice, mirin, and white sugar into a mixing bowl and whisk until all ingredients are fully incorporated. Set aside for now.
  3. Next, shred both red and green cabbage, place them in a bowl, and mix it together with the sesame dressing. 
  4. Grab a cucumber and use the batonnet style to make rectangular sticks. Place them in a suitable sealed container for pickling. 
  5. Mix water, vinegar, and white sugar using a whisk then boil the mixture in a pot until the sugar dissolves. 
  6. Once cooled, you can now pour the pickling solution on the cucumber and refrigerate for an hour. 
  7. Before assembling your bao, remember to steam the store-bought cua pao.
  8. Remove the pieces of your Chicken Star Barbecue from its stick and set aside in a container. 
  9. Start layering the bao: spread peanut hoisin sauce onto one side of the cua pao, place the scoop of Asian slaw, add the barbecue (2-3 pieces per bao will do), sprinkle ground peanuts on the meat, place the pickled cucumber, and top with fresh cilantro.

Chicken Hotdog Meatloaf 

Level up your baon game with an interesting variation on the viand that’s been a staple of both school and office lunches. 

 

Ingredients:

  • 7 pcs of Chicken Star Chicken Hotdog 
  • 200g of Chicken Star Premium Ham 
  • ½ kg of ground pork 
  • 100g of all-purpose flour 
  • 80g of raisins 
  • 80g of pickled relish 
  • 1 minced red onion 
  • 6-8ml of liquid seasoning
  • 1 tsp of salt
  • 1 tsp of pepper
  • 100g of cheddar cheese
  • 100g of tomato ketchup
  • 2 eggs

You Will Need:

  • A mixing bowl 
  • A pair of tongs
  • A steamer
  • A frying pan 
  • A spatula 
  • A roll of aluminum foil 

Instructions:

  1. In a mixing bowl, place ground pork, all-purpose flour, and minced Chicken Star Premium Ham. Then add raisins, pickled relish, and minced red onion. 
  2. Pour liquid seasoning on top followed by a dash of salt and pepper, shredded cheese, tomato ketchup, and two whole eggs. Using a spatula, make sure to mix everything well until all ingredients are fully incorporated. 
  3. Place the mixture on aluminum foil and, using a spatula, flatten it to a rectangular shape. 
  4. Place the Chicken Star Hotdog in the center then, using the aluminum foil, gently wrap everything into a roll, twisting the ends to seal it.
  5. Place it inside the steamer for about 30-45 minutes then carefully unwrap the foil using a pair of tongs. 
  6. Now get the frying pan sizzling with oil and sear the meatloaf on both sides for 3 minutes each. 
  7. Cut the meatloaf into pieces and arrange them on a plate with dipping sauce and enjoy!

Roasted Chicken in Coconut Milk 

This Filipino take on the slow-cooked juicy chicken offers a fresh taste of coconut to brightly complement the herby profile of the dish. Cooking this recipe will give you major beach bumming island vibes. 

 

Ingredients:

  • 1 whole Chicken Star Roasted Chicken
  • 2 tbsp of cooking oil 
  • 1 tsp of minced garlic 
  • 1 small white onion 
  • 1 whole ginger 
  • 1 inch of lemongrass (white part)
  • ¾ cup of coconut milk 
  • 2 tbsp of calamansi juice
  • 2 tbsp of fish sauce
  • Salt 
  • Pepper
  • Pepper leaves

You Will Need:

  • A chopping knife
  • A kitchen knife
  • A mixing bowl  
  • A frying pan 

Instructions:

  1. Chop up the Chicken Star Roasted Chicken then set it aside on a plate.
  2. Heat up a frying pan and get it sizzling with some cooking oil, minced garlic, minced white onion, and a ginger julienned into strips.
  3. Take the white part of the lemongrass and bruise it by lightly pounding on the stalk with the surface of your kitchen knife. Then add it to the frying pan along with the other ingredients.
  4. Now it’s time to add the roast chicken and integrate it into the aromatics and flavorings before adding the coconut milk. 
  5. Add calamansi juice and fish sauce then add salt and pepper to taste.
  6. Turn off the heat and add a bunch of pepper leaves and mix it all together. 
  7. Let the roast chicken soak up all that goodness before transferring everything for plating.

Classic Hotdog Omelette

Wake up your sleepy senses with the soft sizzling of the pan in the morning. The new spin on this dish is about to become an all-day breakfast favorite. 

 

Ingredients:

  • 2 pcs of jumbo Chicken Star Hotdog 
  • Chicken Star Premium Ham
  • ½ sweet potato 
  • ½ red bell pepper
  • ½ green bell pepper
  • ½ white onion 
  • 3 cloves of garlic
  • 4 eggs
  • ½ cup of rice 
  • 2 tbsp of banana ketchup 
  • 2 tsp of hoisin sauce 
  • Salt
  • Pepper
  • 45ml of milk 

You Will Need:

  • A knife 
  • A whisk
  • A mixing bowl 
  • A frying pan

Instructions:

  1. Take your jumbo Chicken Star Hotdog and cut them up into cubes then set it aside.
  2. Next, slice and dice your Chicken Star Premium Ham and set it aside.
  3. Grab half a sweet potato and dice them into little bits then proceed to mince your red and green bell peppers.  
  4. Get a white onion and start mincing and do the same for the garlic.
  5.  Crack four whole eggs into a mixing bowl and beat them with a fork. 
  6. Heat up your pan and get frying! Start with the hotdog bits then transfer it to a separate container once it’s cooked.
  7. Next, sauté some garlic and onion then add diced sweet potato, minced bell peppers, diced ham, and half a cup of cooked rice. 
  8. Pour in banana ketchup and hoisin sauce before tossing the rice around to incorporate the ingredients. Don’t forget to season with salt and pepper afterwards. Set the mixed rice in a separate bowl for now. 
  9. Now it’s time to cook the egg! First, add milk and whisk it with the beaten eggs then season it with salt and pepper to taste. 
  10.  Pour in the egg mixture into a wide pan and cook to a fluffy consistency.
  11. Add the flavored rice on top of the cooked egg then top it all off with Chicken Star hotdog cubes. 
  12. Fold the egg over the entire filling then transfer the omelette to a plate and drizzle banana ketchup on top. This is best served (and eaten) while it’s still hot so what are you waiting for?
