An everyday kakanin for many Filipinos is the palitaw. "Palitaw" comes from the Filipino word "litaw" meaning "to float" which is what happens to the dessert when cooked in boiling water. It is topped with sugar, grated coconut and toasted sesame seeds. Just like many dishes, many versions of the palitaw has also "surfaced" including the palicorn (palitaw with corn) and the dulce de leche palitaw, and ube palitaw.
