The story of the Pancit Malabon dates back to 1874 during the Spanish occupation of the Philippines. It was only by accident that Eulalia Delos Santos created the original recipe. She did not even have rice noodles, but used labong or bamboo sprouts instead. Her recipe, handed down through generations has evolved, but how does the original Pancit Malabon tastes like?
